MUTTON DRY ROAST

INGREDIENTS
FOR MARINATION
- 3teaspoon Oil / எண்ணெய்
- 1 tablespoon Kashmiri chilli / காஷ்மீரி மிளகாய்
- 1 tablespoon Chilli powder / மிளகாய் தூள்
- 2 tablespoon Coriander powder / கொத்தமல்லி தூள்
- 1/2 teaspoon Turmeric powder / மஞ்சள் தூள்
- 1 teaspoon Garam masala / கரம் மசாலா
- 1kg Mutton / ஆட்டிறைச்சி
- 5 teaspoon Oil / எண்ணெய்
- 1 teaspoon Fennel seed / பெருஞ்சீரகம்
- 1 teaspoon Cumin seed / சீரகம்
- Curry leaves / கறிவேப்பிலை
- 5 tablespoon Ginger Garlic & Green chilli paste / இஞ்சி பூண்டு & பச்சை மிளகாய் விழுது
- 2 Red chilli / சிவப்பு மிளகாய்
- 2 big Onion / வெங்காயம்
- 1 Tomato / தக்காளி
- Salt / உப்பு
- 1 teaspoon Black Pepper powder / கருப்பு மிளகு தூள்
- 1 cup Thick Coconut Milk / கெட்டியான தேங்காய் பால்
- Coriander leaves / கொத்துமல்லி தழை
INSTRUCTIONS
- Take a large kadai or pan and heat 3 teaspoon Oil. Add Kashmiri chilli, Chilli powder, Coriander powder, Turmeric powder, Garam masala.
- Cook the masala well with oil until the raw smell goes. Turn off the flame. Add the cooked masala to the Mutton. Now Marinate the mutton well with the masala.
- Now take another kadai or pan add 5 teaspoon Oil let them heat. Now add Fennel seed and Cumin seed let them crack and add Curry leaves cook well.
- Add Ginger, Garlic and Green chilli paste cook well for 4 to 5 minutes until the raw smell goes and tunes to aroma to the gravy.
- Now Red chillis and Onion cook well until the onion translucent and tune into golden color. Then add Tomato and add Salt to cook faster.
- Cover and cook for 10 minutes mutton will release water open the lid add Pepper powder mix well and add Thick Coconut milk mix it and cover the lid.
- Stir it in-between and cook for 30 minutes. Now mutton will be juicy and it will be cooked. Final hero / flavor for the dish is Coriander leaves add it mix it and turn off flame. Serve it hot.
- If you don't want to cook the masala with oil you can dry roast the masala without the oil.
- If you don't like mutton you can go with chicken.
- I have add 1 small tomato because I don't like adding too much tomatoes in mutton.
- I have added only coconut milk it was enough for me to cook the mutton. If you want to add water you can add little bit (don't add too much).
- If you want to add more spices to mutton you can add.
- I have used homemade garam masala you can use store brought masala.
Mutton dry roast goes well with White rice, Dosa, Chapati and parotta. We ate with white rice but at night I tried it with parotta and chapati it was ultimate taste. So do try that combo and tell us you feedback.
